  • 2 medium vine ripe tomatoes
  • 4 ounces diced avocado
  • 2 tablespoons fresh basil leaves (chopped)

  • Extra virgin olive oil
  • Kosher salt and black pepper to taste

  1. In a bowl, mix chopped red onion with olive oil, balsamic vinegar, salt, and pepper. Let it sit for 5 minutes.
  2. In another bowl, combine chopped tomatoes, minced garlic, basil, and the onion mixture. Season to taste and let sit for at least 10 minutes.

  4. Season the salmon fillets with salt and pepper on both sides.
  5. Grill the salmon skin-side down for 8 to 10 minutes without flipping until cooked through.
