  • 1 ½ pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 1 red bell pepper (diced)
  • 1 orange bell pepper (diced)
  • 1 cup pineapple chunks
  • 1 green bell pepper (diced)
  • 1 red onion (diced)
  • ⅓ cup ketchup
  • ⅓ cup soy sauce
  • ⅓ cup brown sugar
  • ¼ cup pineapple juice
  • 2 teaspoons sesame oil
  • 1 teaspoon minced fresh ginger
  • 3 cloves garlic (minced)
  • 1 teaspoon sriracha
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. In a bowl or freezer bag, combine all marinade ingredients; reserve ½ cup for vegetables.
  2. Add chicken to the remaining marinade; coat well and marinate for at least 30 minutes or up to 4 hours.
  3. Preheat grill to medium-high heat (400°F).
  4. Toss diced vegetables with reserved marinade until coated.
  5. Assemble kabobs by threading marinated chicken and veggies onto skewers.
  6. Grill for 12 to 16 minutes, turning frequently and basting with reserved marinade.
