  • 3 tablespoons water (for cornstarch slurry)
  • Sesame seeds for topping

Instructions

  1. In a medium bowl, mix pineapple juice, chicken broth, soy sauce, honey, grated ginger, and optional red pepper flakes. Whisk well and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then sear in the skillet for about 6 minutes until golden brown.
  3. Add diced red bell pepper and cook for an additional 4 minutes until slightly softened.
  4. Stir in pineapple chunks and cook for another 4 minutes until caramelized.
  5. Pour the prepared sauce into the skillet and simmer for 5 minutes.
  6. Create a cornstarch slurry by mixing cornstarch with water; add this mixture to the skillet to thicken the sauce over the next 5 minutes.
  7. Garnish with sesame seeds and sliced green onions before serving.
