  • 15 jarred cherries
  • 1 1/4 lbs mixed crystallized fruits
  • 12 oz pitted dates
  • 3 oz raisins
  • 2 oz diced pineapple
  • 1 cup all-purpose flour
  • 2/3 cup granulated sugar
  • 1/2 cup butter
  • 2 eggs

Instructions

  1. Preheat oven to 350°F (175°C) and grease a Bundt pan.
  2. In one bowl, whisk together flour, baking powder, allspice, cloves, cinnamon, and salt.
  3. In another bowl, cream together butter and sugar until fluffy; add eggs one at a time.
  4. Gradually mix dry ingredients into wet ingredients; stir in dark corn syrup and fruit juices.
  5. Fold in nuts and fruits until evenly distributed.
  6. Pour batter into prepared pan; bake for about 60 minutes or until a toothpick comes out clean.
  7. Cool for 10 minutes in the pan before transferring to a wire rack.
