  • 6 to 12 peeled garlic cloves
  • 1/3 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice (plus extra for finishing)
  • 4 swordfish steaks (56 ounces each)
  • Fresh parsley (for garnish)
  • Optional: crushed red pepper flakes

Instructions

  1. In a mixing bowl, combine garlic, olive oil, lemon juice, ground coriander, cumin, sweet paprika, salt, and black pepper. Whisk until blended.
  2. Place swordfish steaks in a shallow dish or resealable bag and pour the marinade over them. Ensure both sides are coated evenly. Marinate for at least 15 minutes at room temperature (or up to an hour in the refrigerator).
  3. Preheat your grill or grill pan over medium-high heat.
  4. Remove swordfish from marinade, letting excess drip off. Grill for about 4 minutes on one side without moving it; then flip carefully and cook another 4 minutes until cooked through.
  5. Allow the fish to rest briefly before serving. Drizzle with additional lemon juice and garnish with parsley and optional crushed red pepper.
