  • ½ cup mixed nuts (cashews, almonds, walnuts), roughly chopped
  • ¼ cup pumpkin seeds
  • 2 tbsp chia seeds
  • 2 tbsp flaxseeds
  • ½ cup dried cranberries (or raisins)
  • ½ tsp cinnamon
  • Pinch of salt
  • ¼ cup natural peanut butter or almond butter
  • ¼ cup honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine rolled oats, chopped nuts, pumpkin seeds, chia seeds, flaxseeds, dried cranberries (or raisins), cinnamon, and salt.
  3. In a small saucepan over low heat, melt natural peanut butter and honey until smooth; then stir in vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix until well combined.
  5. Scoop out portions of the dough onto the prepared baking sheet and flatten each ball slightly.
  6. Bake for 12–15 minutes until golden brown. Allow cooling before enjoying!
