  • 3/4 cup shredded carrot
  • 1 yellow bell pepper (chopped)
  • 1/2 cup diced red onion
  • 5 ounces sliced olives
  • 14 ounces cherry tomatoes (halved)
  • 34 ounces turkey pepperoni (quartered)
  • 6 ounces fresh mozzarella (cubed)
  • 2 ounces fresh basil (thinly sliced)
  • 1/3 cup light Caesar dressing
  • 1/3 cup light Greek dressing
  • Salt and black pepper to taste

Instructions

  1. Boil the pasta in salted water until al dente according to package instructions. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the prepared vegetables, turkey pepperoni, mozzarella, basil, salt, and pepper. Toss well.
