  • 2 cups fresh blueberries
  • 3 tablespoons sugar
  • 1 ½ tablespoons corn starch
  • Pinch of salt
  • 2 teaspoons fresh lemon juice
  • 1 package of pie crust (2 in a pack)
  • 1 egg
  • 1 tablespoon water
  • ¾ cup powdered sugar
  • 12 tablespoons milk

Instructions

  1. Prepare the filling by cooking blueberries with sugar, cornstarch, salt, and lemon juice in a medium saucepan until thickened.
  2. Preheat the oven to 425°F (220°C) and line baking sheets with parchment paper.
  3. Roll out the pie crust and cut into circles.
  4. Assemble hand pies by placing filling on half of the circles, topping with remaining circles, crimping edges securely.
  5. Brush with egg wash and bake for about 20 minutes until golden brown.
