  • 1¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 4 roasted nori sheets (sushi-grade)
  • 1 cup imitation crab
  • 1 ripe avocado, sliced
  • 1 small cucumber, cut into thin strips
  • 2 tbsp spicy mayo (mayo + sriracha)
  • 1 tbsp eel sauce
  • ½ cup toasted panko breadcrumbs or French fried onions

Instructions

  1. Rinse the rice until the water runs clear and cook it in a rice cooker or stovetop pot with water until tender.
  2. Mix vinegar, sugar, and salt in a saucepan over low heat until dissolved; fold into warm rice and let cool.
  3. Set up your rolling station with a bamboo mat wrapped in plastic and a bowl of water mixed with rice vinegar.
  4. Lay the nori shiny side down on the mat, spread cooled rice evenly on top, flip it so the rice faces down.
  5. Layer imitation crab, avocado slices, cucumber strips, and optional add-ins in the center.
  6. Roll tightly using the mat while sealing the edge of nori.
