  • 1 cup unsalted butter, at room temperature
  • 1/2 cup sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • 3 cups shredded sweetened coconut
  • 15 ounces soft caramels
  • 3 tablespoons whole milk
  • 1/4 teaspoon salt
  • 8 ounces dark chocolate

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream together 1 cup of unsalted butter and 1/2 cup of sugar until light and fluffy.
  3. Add in 2 cups of all-purpose flour, 1/4 teaspoon baking powder, 1/2 teaspoon salt, 2 tablespoons milk, and 1/2 teaspoon vanilla extract. Mix until well combined.
  4. Scoop tablespoon-sized portions onto the prepared baking sheets, spacing them about 2 inches apart, and bake for 12-15 minutes or until golden around the edges.
  5. Cool completely on wire racks.
  6. In a saucepan over low heat, melt 15 ounces of soft caramels with 3 tablespoons of whole milk and 1/4 teaspoon salt until smooth; stir in 3 cups shredded coconut.
  7. Top each cooled cookie with the caramel-coconut mixture; let set while melting 8 ounces of dark chocolate to drizzle over the top.
