  • ½ cup vegetable oil
  • 1 cup blackberry puree (fresh or frozen)
  • 2 tsp vanilla extract
  • ½ cup softened butter (or vegan butter)
  • 2 cups powdered sugar
  • ½ cup blackberry jam

Instructions

  1. Preheat your oven to 350°F (175°C) and grease/flour two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and sugar until smooth.
  3. In another bowl, beat eggs, vegetable oil, blackberry puree, and vanilla extract until well combined.
  4. Gradually mix wet ingredients into dry ingredients until just combined.
  5. Pour batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool completely. For frosting, whip together softened butter, powdered sugar, and blackberry jam until creamy.
  7. Frost between layers and on top of the cooled cake before serving.
