  • ½ cup cocoa powder
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 2 tsp instant coffee granules (dissolved in 1 tbsp hot water)
  • 1 tsp vanilla extract
  • 4 oz cream cheese (softened)
  • 1½ cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large bowl, whisk together flour, cocoa powder, granulated sugar, brown sugar, and instant coffee granules.
  3. In another bowl, mix melted butter with eggs and vanilla extract until combined.
  4. Pour the wet mixture into the dry ingredients and stir until just combined.
  5. Pour the batter into the prepared dish and bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  6. For the frosting, beat softened cream cheese with powdered sugar until smooth. Frost cooled brownies generously.
  7. Let set for at least half an hour before cutting into squares.
