  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter (melted)
  • 2 large eggs (room temperature)
  • 1/2 cup coconut milk
  • 1 cup shredded coconut (sweetened or unsweetened)
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together cocoa powder, sugar, flour, baking powder, and salt until combined.
  3. In another bowl, melt butter and let cool slightly. Whisk in eggs and then stir in coconut milk until smooth.
  4. Pour the wet mixture into the dry ingredients and mix until just combined. Gently fold in shredded coconut and chocolate chips.
  5. Spread the batter into the prepared pan. Drizzle caramel sauce on top.
  6. Bake for 25-30 minutes or until a toothpick comes out mostly clean; a little gooey is fine. Let cool completely before slicing.
