  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsalted butter (softened)
  • ½ cup dulce de leche
  • 2 large eggs
  • ½ cup whole milk
  • 1 tsp ground cinnamon
  • For the topping: ¼ cup granulated sugar + 2 tsp ground cinnamon (mixed)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a bowl, whisk together flour, baking powder, sugar, and cinnamon; set aside.
  3. In another bowl, cream the butter until fluffy. Add eggs one at a time, mixing well. Stir in milk until smooth.
  4. Gradually mix dry ingredients into wet ingredients until just combined; do not overmix.
  5. Fill each liner halfway with batter, add a dollop of dulce de leche in the center, then cover with more batter until two-thirds full.
  6. Bake for about 18-20 minutes or until a toothpick comes out clean. Cool slightly before rolling in the cinnamon-sugar mixture.
