2 cups all-purpose flour
1/2 cup unsalted butter (cold)
1/4 cup whole milk (warm)
2 tablespoons sugar
1 teaspoon active dry yeast
1 teaspoon salt
Instructions
In a large bowl, combine flour, sugar, salt, and yeast. Gradually mix in warm milk until a shaggy dough forms. Knead on a floured surface until smooth.
Flatten cold butter between parchment sheets into a rectangle and chill.
Roll out the dough into a rectangle twice as long as it is wide; place chilled butter on one half and fold over.
Roll and fold the dough into thirds three times to laminate.
Cut triangles from the dough and roll each triangle from base to tip to shape croissants.
Proof on lined trays for about 1 hour until doubled in size.
Preheat oven to 400°F (200°C) and bake for 15-20 minutes until golden brown.
