  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash enough bananas to yield 2 1/4 cups.
  2. In a large bowl, whisk together flour, salt, baking soda, and nutmeg until combined.
  3. Cream butter with white and brown sugars in another bowl. Add cinnamon, eggs, vanilla extract, and mashed bananas; stir until blended.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Pour batter into a greased baking pan.
  6. Insert a trivet into the Instant Pot with 1 cup of water and place the covered pan on top.
  7. Seal the lid and cook on manual for 50 minutes; quick release when done.
