  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 cups shredded carrots (about 2 medium carrots)
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, granulated sugar, and brown sugar until combined.
  3. Create a well in the dry mixture and add vegetable oil and eggs; whisk until smooth.
  4. Fold in shredded carrots and nuts if using.
  5. Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until a toothpick comes out clean.
  6. Allow cooling completely before cutting into squares. Top with cream cheese frosting if desired.
