  • 3 large eggs (room temperature)
  • 1/4 cup vegetable oil
  • 1 cup grated carrots (freshly grated)
  • 8 oz cream cheese (full-fat)
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and spray lightly with nonstick cooking spray.
  2. In a medium bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  3. In a large bowl, beat eggs and sugar until well combined. Mix in vegetable oil.
  4. Fold in grated carrots, then gently combine the dry ingredients until just mixed.
  5. Spread batter evenly in the prepared pan and bake for 15-18 minutes or until a toothpick comes out clean.
  6. Let cool for 5 minutes before flipping onto a powdered sugar-dusted parchment paper. Roll up while warm and let cool completely.
  7. For the filling, beat cream cheese and powdered sugar until smooth. Unroll the cooled cake, spread filling evenly, and roll back up without parchment.
