  • 1 1/4 cups cold almond milk
  • 1 cup unsalted butter
  • 16 chocolate batons or 8 oz semi-sweet chocolate

Instructions

  1. In a large mixing bowl, combine flour, sugar, salt, and yeast. Make a well in the center and add cold almond milk. Mix until a dough forms.
  2. Knead the dough on a floured surface for about 5–10 minutes until smooth. Place in a greased bowl, cover with plastic wrap, and let it rise in a warm place until doubled (about 1 hour).
  3. Prepare the butter layer by placing cold butter between parchment paper and rolling it into a rectangle about 1/2 inch thick. Chill while the dough rises.
  4. Roll out the risen dough into a large rectangle, place the chilled butter on one half, and fold over to encase it completely.
  5. Roll out gently into another large rectangle and perform three folds (chilling between folds if necessary).
  6. Shape croissants by cutting triangles from rolled-out dough and placing chocolate batons at the base before rolling up from base to tip.
  7. Preheat oven to 400°F (200°C). Arrange croissants on parchment-lined baking sheets, brush with egg wash if desired, and bake for about 20 minutes or until golden brown.
