  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1 medium red onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tsp dried oregano
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. In a mixing bowl, combine olive oil, lemon juice, salt, pepper, and oregano. Add chicken breasts and coat well.
  3. Slice zucchini and cherry tomatoes; chop red onion and mince garlic.
  4. Layer zucchini in the baking dish, place seasoned chicken on top, and sprinkle with cherry tomatoes and red onion.
  5. Drizzle remaining sauce over the dish and toss gently if desired.
