  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.5 cup vegetable oil (or melted coconut oil)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a standard loaf pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix eggs, vegetable oil, and vanilla extract until smooth; gently fold in chopped rhubarb.
  4. Pour wet ingredients into dry ingredients and stir just until combined—avoid overmixing.
  5. Transfer batter to prepared loaf pan and bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  6. Cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
