  • 9 lasagna noodles (traditional or no-boil)
  • 15 oz ricotta cheese
  • 2 cups shredded whole milk mozzarella cheese
  • 4 cups marinara sauce (homemade or store-bought)
  • 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a baking dish with nonstick spray.
  2. If making homemade marinara, sauté minced garlic in olive oil, add crushed tomatoes, salt, pepper, and herbs; let simmer.
  3. In a bowl, combine ricotta with half of the mozzarella and half of the Parmesan; season with salt and pepper, adding spinach if using.
  4. Spread a layer of marinara on the bottom of the baking dish. Layer lasagna noodles, half of the cheese mixture, and more marinara. Repeat until all ingredients are used, finishing with marinara on top.
  5. Sprinkle remaining mozzarella and Parmesan over the top layer. Cover with foil and bake for 30 minutes; remove foil and bake uncovered for an additional 15 minutes until bubbly.
  6. Let cool slightly before slicing to serve. Drizzle with extra marinara if desired.
