  • 16 oz cream cheese (full-fat, softened)
  • 1 cup granulated sugar
  • 2 ripe peaches (chopped)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 tsp vanilla extract
  • 1 pre-made graham cracker crust (or homemade)
  • 1 tbsp agar-agar powder

Instructions

  1. Prepare the crust by pressing graham cracker crumbs mixed with melted butter into the bottom of a springform pan.
  2. Blend cream cheese and sugar until smooth; add vanilla.
  3. Fold in chopped peaches and half of the mixed berries into the cream cheese mixture.
  4. Dissolve agar-agar in water over medium heat and mix into the filling while warm.
  5. Pour filling over the crust and refrigerate for at least four hours or overnight.
  6. Top with remaining mixed berries before serving.
