  • ½ cup breadcrumbs (plain or Italian)
  • ¼ cup chopped fresh parsley
  • 1 small onion, finely diced
  • 1 large egg
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup low-sodium beef broth
  • ½ cup sour cream
  • 1 tsp agar-agar powder

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, parsley, onion, egg, garlic powder, salt, and pepper until just combined.
  2. Form into one-inch meatballs and place on a parchment-lined baking sheet.
  3. Heat oil in a skillet over medium heat; cook meatballs until browned on all sides (about 5 minutes). Set aside.
  4. In the same skillet, add beef broth; bring to a simmer. Stir in sour cream and whisk in agar-agar until thickened (about 3 minutes).
  5. Return meatballs to the skillet; simmer in sauce for an additional 5 minutes.
  6. Serve warm with mashed potatoes or noodles.
