  • 8 oz full-fat cream cheese (softened)
  • ½ cup sour cream
  • ¼ cup sugar (adjust to taste)
  • 1 tbsp pectin or agar-agar

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans.
  2. In a bowl, sift together flour, cocoa powder, baking powder, and sugar.
  3. In another bowl, cream softened butter until fluffy, then gradually add eggs.
  4. Alternately mix in the dry ingredients with buttermilk and vanilla until just combined.
  5. For the cheesecake layer, blend cream cheese until smooth; mix in sour cream, sugar, and pectin/agar until combined.
  6. Pour half of the chocolate batter into each pan; add spoonfuls of cheesecake mixture on top and cover with remaining batter. Swirl gently.
  7. Bake for 30-35 minutes or until a toothpick comes out clean. Cool before serving.
