  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased 9×9-inch baking pan.
  2. In a mixing bowl, combine brown sugar, kosher salt, vanilla extract, flour, cinnamon, nutmeg, baking powder, egg, and butter. Mix until smooth and fold in grated carrots.
  3. In another bowl, beat together softened cream cheese with egg yolk and granulated sugar until creamy.
  4. Pour half of the batter into the prepared pan; dollop cream cheese mixture on top, then add remaining batter.
  5. Bake for about 30 minutes or until a toothpick inserted comes out clean. Let cool completely before cutting into squares.
