  • 1/4 cup cornstarch
  • 1 piece egg white
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Vegetable oil
  • 1 tablespoon sesame oil
  • 2 tablespoons minced garlic
  • 1 tablespoon minced ginger
  • 23 dried red chilies or crushed red pepper flakes
  • 1/2 cup tomato ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon chili garlic sauce
  • 1 tablespoon vinegar
  • 1 tablespoon sugar or honey
  • 1/4 cup water
  • Sliced green onions for garnish
  • Toasted sesame seeds for garnish
  • Thin strips of fried onion or bell pepper for garnish

Instructions

  1. Cut the chicken into bite-sized pieces. In a mixing bowl, combine cornstarch, egg white, salt, black pepper, and chicken pieces. Toss until well-coated.
  2. Heat vegetable oil in a frying pan or wok over medium-high heat. Fry the chicken in batches until golden brown and crispy. Drain on paper towels.
  3. In the same pan, reduce heat to medium. Add sesame oil, garlic, ginger, dried red chilies, ketchup, soy sauce, chili garlic sauce, vinegar, sugar or honey, and water. Stir to combine.
  4. Return fried chicken to the pan and toss to coat in sauce; cook for an additional minute.
  5. Garnish with sliced green onions and toasted sesame seeds before serving hot over rice or noodles.
