  • 2 stalks celery (diced)
  • 5 cloves garlic (minced)
  • 5 cups chicken broth
  • 1 lb shelf-stable gnocchi
  • 2 cups cooked chicken (shredded or chopped)
  • 34 oz baby spinach
  • 1 can evaporated milk

Instructions

  1. Sauté the onion, carrots, and celery in sun-dried tomato oil over medium heat for about 5 minutes until softened.
  2. Add sun-dried tomatoes, garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper; sauté for another minute.
  3. Stir in tomato paste, chicken base, and flour to create a roux-like mixture; cook for one minute.
  4. Gradually pour in chicken broth while scraping browned bits from the pot; stir to combine.
  5. Bring to a simmer and let it partially cover for about 15 minutes.
  6. Add cooked chicken, spinach, evaporated milk, and gnocchi; simmer for an additional 5-10 minutes until heated through.
  7. Serve topped with grated parmesan cheese.
