  • 3 tablespoons tomato paste
  • 1 potato, diced into cubes
  • 4 cups vegetable broth
  • ½ cup dried lentils or 1 can cooked lentils
  • 1 can (15oz) cannellini beans
  • 1 cup small pasta (e.g., farfalline)
  • 3 cups spinach, roughly chopped
  • Salt and black pepper to taste
  • Extra virgin olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, celery, and bay leaves; sauté for about 5 minutes until the onions are translucent.
  2. Stir in garlic and tomato paste; cook for an additional 3-5 minutes until fragrant.
  3. Add vegetable broth, potato, water, and lentils (if using dried). Season with salt and pepper. Bring to a boil and then simmer for 15-20 minutes.
  4. Incorporate canned beans and any cooked lentils; simmer for another 5 minutes.
  5. Stir in the pasta; cook until al dente according to package instructions.
  6. Add spinach just before serving; stir until wilted. Remove bay leaves before serving.
