  • 2 pounds chicken pieces
  • 1 habanero chile
  • 1 bunch scallions
  • 2 cloves garlic
  • 1.5 teaspoons dried thyme
  • 2 tablespoons brown sugar
  • 1 tablespoon ground allspice
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 2 tablespoons vegetable oil (plus more for grilling)
  • Salt and pepper to taste

Instructions

  1. Rinse chicken under cold water and pat dry.
  2. In a food processor, blend habanero, scallions, garlic, thyme, brown sugar, allspice, soy sauce, lime juice, vegetable oil, salt, and pepper until smooth.
  3. Place chicken in a sealable plastic bag; add marinade and coat well. Seal tightly and refrigerate overnight.
  4. Preheat grill to medium heat. Brush grill with oil to prevent sticking.
  5. Grill marinated chicken for about 20 minutes until charred and cooked through.
