  • 1 1/2 cups raw walnuts
  • 1/2 cup unshelled pumpkin seeds
  • 6 cups mixed salad greens
  • 12 diced apples or pears
  • 2 sliced avocados
  • 2 cups pomegranate seeds
  • honey or maple syrup
  • olive oil
  • balsamic vinegar
  • dijon mustard
  • fig jam
  • orange juice
  • orange zest
  • salt and pepper

Instructions

  1. Preheat oven to 350°F (175°C). Toast walnuts and pumpkin seeds on a baking sheet for about 10 minutes until golden brown.
  2. While nuts are roasting, dice apples or pears and slice avocados just before serving to maintain freshness.
  3. In a mixing bowl, whisk together honey or maple syrup, olive oil, balsamic vinegar, dijon mustard, fig jam, orange juice and zest. Season with salt and pepper.
  4. In a large serving bowl, combine salad greens, toasted nuts and seeds, diced fruits, sliced avocados, and pomegranate seeds.
  5. Drizzle dressing over the salad and toss gently until well coated. Serve immediately.
