  • 2 lbs ground beef
  • 1 1/2 cups panko bread crumbs
  • 1 large onion (finely diced)
  • 8 cloves garlic (crushed)
  • 2 tbsp gochujang
  • 5 green onions (minced)
  • 2 tsp kosher salt
  • 2 large eggs (lightly beaten to combine)
  • 2 tsp vegetable oil

  • 3 tbsp apricot jam (for glaze)
  • 2 tbsp gochujang (for glaze)
  • 1 tbsp rice apple vinegar (for glaze)
  • 1 tbsp honey (for glaze)
  • 2 tsp soy sauce (for glaze)
  • 1 tsp sesame oil (for glaze)
  • 1/2 tsp granulated garlic powder (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Heat vegetable oil in a pan and sauté diced onions until translucent, then add crushed garlic for another two minutes.
  3. Combine the cooled onion mixture with minced green onions, gochujang, eggs, and salt in one bowl.
  4. In a separate bowl, mix ground beef and panko breadcrumbs, then gently combine both mixtures without overmixing.
  5. Shape the mixture into a loaf and place it in a loaf pan or on a baking sheet.
  6. Bake for about 40 minutes until the internal temperature reaches 140°F.
  7. While baking, mix all glaze ingredients together in a separate bowl.
  8. Once the meatloaf reaches temperature, apply the glaze and return it to the oven for an additional 10-15 minutes until it hits 160°F.
