  • 1 bunch (10 oz) spinach (ends trimmed)
  • 1 clove garlic (finely minced)
  • 1 stalk green onion (chopped)
  • 2 teaspoons soy sauce
  • 1/8 teaspoon salt
  • 2 teaspoons toasted sesame oil
  • 2 teaspoons toasted sesame seeds

Instructions

  1. Trim the spinach ends and slice into 2-inch pieces.
  2. Bring a pot of salted water to a boil, then blanch the spinach for 30 seconds until just wilted.
  3. Transfer the spinach to an ice bath immediately to halt cooking and maintain its crispness.
  4. Once cooled, gently squeeze out excess water from the spinach.
  5. In a mixing bowl, combine the cooled spinach with minced garlic, chopped green onion, soy sauce, salt, sesame oil, and sesame seeds. Mix well until all ingredients are combined.
  6. Serve chilled or at room temperature alongside your favorite main dishes.
