  • 45 lbs beef chuck roast
  • 1 tbsp kosher salt
  • 1 tbsp vegetable oil
  • 1 sweet onion
  • 6 garlic cloves
  • 1 tbsp fresh ginger
  • 2 tbsp gochujang
  • ¼ cup brown sugar
  • ½ cup soy sauce (or coconut aminos)
  • 2 cups beef broth

Instructions

  1. Preheat your Dutch oven over medium-high heat and add vegetable oil.
  2. Season beef with salt and sear in batches until browned on all sides. Remove from pot.
  3. In the same pot, sauté sliced onion, minced garlic, and grated ginger until fragrant.
  4. Stir in gochujang, brown sugar, soy sauce (or coconut aminos), and beef broth; simmer gently.
  5. Return seared beef to the pot, ensuring it's submerged in the sauce. Cover and reduce heat to low.
  6. Slow cook for about 3 hours until the beef is tender.
  7. Serve hot over rice, garnished with fresh cilantro and alongside kimchi.
