  • 12 tablespoons Olive Oil
  • 1 pound Ground Beef
  • 1 large Onion, diced
  • 4 cloves Garlic, minced
  • 1 (15-ounce) can Diced Tomatoes, with juice
  • 1 (15-ounce) can Tomato Sauce
  • ⅓ cup Tomato Paste
  • 4 cups Chicken Broth
  • 12 cups Water
  • 1 tablespoon Italian Seasoning
  • 1 teaspoon Sea Salt
  • Black Pepper, to taste
  • 8 ounces Bowtie Pasta
  • ½ cup Ricotta Cheese
  • 2 ounces Mozzarella Cheese, shredded
  • ¼ cup Parmesan Cheese, shaved, shredded, or freshly grated
  • ¼ cup Fresh Parsley, chopped

Instructions

  1. In a large soup pot, heat olive oil over medium-high heat. Add ground beef, diced onion, and minced garlic. Cook until the beef is browned.
  2. Stir in diced tomatoes (with juice), tomato sauce, tomato paste, chicken broth, Italian seasoning, salt, and pepper. Mix well to combine.
  3. Add uncooked bowtie pasta and bring to a rolling boil over high heat.
  4. Reduce heat to medium and let simmer for 10-15 minutes until pasta is tender, stirring occasionally.
  5. Adjust soup consistency by adding water or extra broth if needed.
  6. Serve hot by stirring in ricotta, mozzarella, and Parmesan cheese as desired. Garnish with chopped parsley.
