  • 300 g crushed Spekulatius or Lebkuchen
  • 100 g melted butter
  • 500 g mascarpone
  • 200 ml cream
  • 100 g powdered sugar
  • 1 tsp cinnamon
  • 1 tsp gingerbread spice
  • 1 tsp vanilla extract
  • Additional cream for topping

Instructions

  1. In a mixing bowl, combine crushed cookies with melted butter until evenly mixed. Press into the bottom of a 9×13 inch dish.
  2. In another bowl, whisk together mascarpone, cream, powdered sugar, cinnamon, gingerbread spice, and vanilla until smooth.
  3. Spread half of the cream mixture over the cookie base. Add another layer of crushed cookies if desired and then top with remaining cream mixture.
  4. For the topping, whip additional cream with powdered sugar and cinnamon until soft peaks form; spread over the top layer.
  5. Garnish with chocolate shavings and chopped almonds or brittle, then refrigerate for at least 4 hours before serving.
