  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1 onion (or 2 shallots)
  • 1 large carrot
  • 2 stalks celery
  • 1 clove garlic
  • 4 sprigs thyme (or 1/2 tsp dried thyme)
  • litres / 6 cups turkey or chicken stock
  • 2 bay leaves
  • 75g / 1/2 cup giant/pearl couscous
  • 250g / 2 cups cooked turkey or chicken
  • Salt and pepper to taste
  • 1 tbsp parsley (chopped)

Instructions

  1. Heat olive oil and butter in a large pot over low heat. Add chopped onion, celery, carrot, and minced garlic with thyme leaves. Sauté for about 5 minutes until softened.
  2. Pour in the turkey or chicken stock and add the cooked turkey. Toss in bay leaves, bring to a boil, and season with salt and pepper.
  3. Stir in giant couscous or noodles into the boiling soup. Reduce heat to medium and cook for approximately 10 minutes until tender.
  4. Remove from heat, sprinkle with chopped parsley, and serve warm.
