  • 1/2 cup (113 grams) unsalted butter
  • 1/2 cup (100 grams) granulated sugar
  • 1 cup (92 grams) rolled oats
  • 1/4 cup (31 grams) all-purpose flour or whole wheat pastry flour
  • 4 large eggs
  • 1/2 cup (160 grams) honey
  • 1 tablespoon lemon zest
  • 1/2 cup (120 ml) freshly squeezed lemon juice
  • 1/4 cup (31 grams) all-purpose flour

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, cream together unsalted butter and granulated sugar until fluffy. Stir in rolled oats and flour until combined. Press mixture into the bottom of a greased 9×9 inch baking dish.
  2. Bake for 15 minutes until lightly golden. While cooling, whisk together eggs, honey, lemon juice, lemon zest, and additional flour in another bowl.
  3. Pour lemon mixture over the baked crust and return to the oven. Bake for an additional 20-25 minutes until set.
  4. Allow cooling completely before cutting into squares.
