  • 1 lb (500g) baby potatoes
  • 1/4 cup olive oil
  • 2 tablespoons butter (melted)
  • 3 cloves garlic (minced)
  • 1 tablespoon Italian parsley leaves (chopped)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt
  • 3 dashes ground black pepper
  • For garnish: 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F (176°C). Wash baby potatoes and cut slits in each without cutting all the way through.
  2. In a mixing bowl, combine olive oil, melted butter, minced garlic, parsley, lemon juice, honey, salt, and black pepper. Mix well.
  3. Place potatoes in a roasting pan and coat them generously with the oil mixture, ensuring some gets into the slits.
  4. Roast for about 60 minutes, basting with remaining oil mixture after 30 minutes until golden brown and crispy.
  5. Serve hot and garnish with freshly chopped parsley.
