  • 4 lamb shanks (approx. 1.52 lbs total)
  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 2 carrots, peeled and diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 2 cups dry apple vinegar
  • 2 cups beef stock (low sodium)
  • 2 teaspoons fresh rosemary, chopped (or 1 tsp dried)
  • 2 teaspoons fresh thyme, chopped (or 1 tsp dried)
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sear lamb shanks until browned on all sides. Remove and set aside.
  2. In the same pot, sauté onion, carrots, celery, and garlic until softened. Stir in tomato paste.
  3. Deglaze with apple vinegar, scraping up brown bits from the pot's bottom. Add beef stock.
  4. Return lamb shanks to the pot along with rosemary, thyme, bay leaves, salt, and pepper.
  5. Cover and simmer on low heat for 2 to 3 hours until tender.
  6. Optional: Thicken gravy with flour mixed in cooking liquid towards the end.
  7. Serve warm garnished with fresh parsley.
