  • 7 tablespoons powdered sugar

  • 10 tablespoons cold butter
  • 1 egg yolk
  • 2 teaspoons heavy cream
  • 1 teaspoon vanilla extract
  • 2½ teaspoons unflavored vegan gelatin powder
  • ¼ cup cold water
  • 12 tablespoons softened butter
  • 1½ cups granulated sugar
  • 10 egg yolks
  • 1 cup mango puree
  • ¼ teaspoon salt
  • 2 tablespoons fresh lemon juice
  • ½ cup raspberry jam

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, powdered sugar, and salt. Add cold butter and blend until crumbly. Stir in egg yolk, heavy cream, and vanilla until combined.
  2. Press the mixture into a greased 9×13-inch baking dish and bake for 20 minutes until golden. Let cool.
  3. For the mango curd, bloom vegan gelatin in water. Beat softened butter and sugar until fluffy; then add egg yolks one at a time, followed by mango puree, salt, lemon juice, and bloomed gelatin.
  4. Pour the mango filling over the crust; dollop raspberry jam on top and swirl gently with a knife.
  5. Bake again for 15-20 minutes until set but slightly jiggly in the center. Allow cooling before slicing.
