  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/3 cup maple syrup
  • 2 large eggs
  • 1 1/4 cups mashed bananas (about 34 bananas)
  • 1 teaspoon vanilla extract
  • 1/4 cup plain yogurt
  • 3/4 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×5-inch loaf pan.
  2. In a medium bowl, sift together flour, baking soda, and salt; set aside.
  3. In a large mixing bowl, beat softened butter and brown sugar until fluffy. Add maple syrup and mix well.
  4. Incorporate eggs one at a time, followed by mashed bananas and vanilla extract.
  5. Gradually add half of the dry ingredients, then mix in yogurt before adding the remaining dry ingredients; stir gently until just combined.
  6. Fold in chopped nuts, pour batter into the prepared pan, and sprinkle additional nuts on top.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
