  • 1/4 cup maple sugar

  • 1 teaspoon maple extract
  • 1 1/2 cups all-purpose flour
  • 3 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter (room temperature)
  • 1 cup powdered sugar
  • 1 tablespoon pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon maple extract
  • 1/4 teaspoon salt

Instructions

  1. In a mixing bowl, cream together room-temperature unsalted butter and maple sugar until fluffy.
  2. Add powdered sugar, maple syrup, and maple extract; mix well.
  3. In another bowl, combine all-purpose flour, cornstarch, and salt.
  4. Gradually incorporate this dry mixture into the wet ingredients until a dough forms.
  5. Chill the dough in plastic wrap for at least 30 minutes.
  6. Preheat oven to 350°F (175°C) and prepare baking sheets with parchment paper.
  7. Roll out the chilled dough on a floured surface to 1/8 inch thick and cut into leaf shapes using a cookie cutter.
  8. Bake for 8 – 10 minutes until barely golden brown around the edges. Cool completely on wire racks.
  9. For the filling, beat together butter, powdered sugar, maple syrup, vanilla extract, maple extract, and salt until smooth.
  10. Sandwich filling between two cookies.
