- 227 g (1 cup) unsalted butter (room temperature)
- 250 g (1 1/4 cup) granulated sugar (and more for rolling)
- 1 large egg (room temperature)
- 2 tsp vanilla extract
- 270 g (2 1/4 cup) all-purpose flour
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
- 2 tbsp ube (purple yam) powder
- 1 tbsp ube extract
- Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
- In a stand mixer, cream together the butter and sugar until smooth. Add the egg and vanilla; mix until combined.
- In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into the butter mixture until just combined.
- Divide the dough in half; combine one half with ube powder and ube extract until well mixed.
- Roll heaping tablespoons of both doughs together to form dough balls and coat in granulated sugar.
- Bake for 11 to 14 minutes or until edges are lightly golden brown. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
