  • 227 g (1 cup) unsalted butter (room temperature)
  • 250 g (1 1/4 cup) granulated sugar (and more for rolling)
  • 1 large egg (room temperature)
  • 2 tsp vanilla extract
  • 270 g (2 1/4 cup) all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp ube (purple yam) powder
  • 1 tbsp ube extract

Instructions

  1. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
  2. In a stand mixer, cream together the butter and sugar until smooth. Add the egg and vanilla; mix until combined.
  3. In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Gradually mix into the butter mixture until just combined.
  4. Divide the dough in half; combine one half with ube powder and ube extract until well mixed.
  5. Roll heaping tablespoons of both doughs together to form dough balls and coat in granulated sugar.
  6. Bake for 11 to 14 minutes or until edges are lightly golden brown. Cool on the baking sheet for 10 minutes before transferring to a wire rack.
