Mediterranean Carrot Salad is a vibrant, nutritious dish that combines fresh carrots, protein-packed green lentils, and aromatic spices for an explosion of flavor. This quick and easy salad is perfect as a light lunch or a colorful side dish at any gathering.

  • 4 medium carrots
  • 2 cloves garlic
  • 1 cup green lentils
  • 1/4 cup toasted almonds
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup fresh mint leaves

Instructions

  1. Rinse the green lentils under cold water. In a pot, combine the lentils with 3 cups of water or broth. Bring to a boil over medium heat, then reduce to low and simmer uncovered for about 20 minutes until tender. Drain excess water if needed.
  2. In a skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  3. Peel the carrots and cut them into thin matchsticks or grate them using a box grater. Combine the sautéed garlic with the carrots in a mixing bowl.
  4. Add cooked lentils, lemon juice, cumin, paprika, salt, and pepper to the carrot mixture. Toss gently until well combined.
  5. Fold in toasted almonds and fresh mint leaves just before serving.
