1 pound boneless, skinless chicken breasts
3 tablespoons olive oil
1 whole lemon (zest and juice)
1 tablespoon honey
1 teaspoon garlic powder
1 teaspoon oregano
1 teaspoon basil
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon red pepper flakes
1 cup Greek yogurt
1/2 cup cucumber (grated and drained)
1 tablespoon lemon juice
1 cup tomatoes (diced)
1 cup cucumber (sliced)
2 cups lettuce (chopped)
1/2 cup red onion (thinly sliced)
1/4 cup fresh parsley (for garnish)
2 cups cooked rice (brown rice or quinoa can be used)
Instructions
Marinate the chicken by combining olive oil, lemon zest and juice, honey, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes in a mixing bowl. Add the chicken breasts and coat evenly. Refrigerate for at least 30 minutes.
Prepare tzatziki sauce by mixing Greek yogurt, grated cucumber (drained), lemon juice, olive oil, minced garlic, and fresh dill in another bowl. Refrigerate until ready to use.
Cook marinated chicken in a skillet over medium heat for 6–7 minutes on each side until fully cooked (internal temperature should reach 165°F). Let rest before slicing.
Assemble bowls by layering cooked rice as the base and topping with sliced chicken along with diced tomatoes, cucumbers, lettuce, red onion, tzatziki sauce, and garnish with parsley.
