  • 1/2 cup grape tomatoes, quartered
  • 2 cloves garlic, crushed
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried basil
  • 1 cup cooked diced chicken
  • 6 oz marinated artichoke hearts and liquid (1/2 jar)
  • 1 cup cauliflower rice
  • 1 cup fresh baby spinach, chopped
  • 1/4 cup sun dried tomatoes, chopped
  • 3 sweet peppers, halved

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Microwave halved sweet bell peppers for 4 minutes to soften.
  3. In a large sauté pan, heat olive oil over medium heat and sauté crushed garlic for 1 minute.
  4. Add quartered grape tomatoes, oregano, and basil; cook for another minute.
  5. Stir in marinated artichokes and sun-dried tomatoes; let simmer for 2 minutes.
  6. Mix in cooked chicken and cauliflower rice; season with salt and black pepper, cooking for an additional minute.
  7. Stir in chopped spinach until wilted; remove from heat and allow to cool slightly.
  8. Stuff each softened pepper half with the chicken mixture and place them in a baking dish.
  9. Bake in the oven for about 10 minutes until peppers are tender.
