  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • ½ cup uncooked rice (or orzo pasta)
  • 2 cups cooked shredded chicken
  • 2 large eggs
  • Juice of 2 lemons
  • Salt and pepper to taste
  • Fresh dill for garnish

Instructions

  1. In a large pot over medium heat, heat the olive oil. Add the diced onion and sauté for about 5 minutes until softened. Stir in the minced garlic and cook for another minute.
  2. Pour in the chicken broth and bring to a boil. Add rice (or orzo) and reduce to a simmer; cook for 10–12 minutes until tender.
  3. While cooking, whisk the eggs in a medium bowl until frothy, then gradually add lemon juice while whisking continuously.
  4. Temper the egg-lemon mixture by ladling hot broth into it slowly while whisking. Then slowly pour this back into the pot while stirring.
  5. Stir in shredded chicken; heat through for about 5 minutes without boiling. Season with salt and pepper.
  6. Serve hot, garnished with fresh dill and lemon wedges.
