Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion (diced)
  • 2 garlic cloves (minced)
  • ½ red bell pepper (diced)
  • 1 small jalapeno (seeded and finely diced)
  • 1 cup long grain white rice
  • ½ teaspoon cumin
  • kosher salt (to taste)
  • 8 ounces tomato sauce
  • 1 cup vegetable or chicken broth

Instructions

  1. Rinse the rice thoroughly using a fine mesh sieve to remove excess starch.
  2. In a large saucepan over medium-high heat, heat olive oil. Sauté diced onion, minced garlic, red bell pepper, and jalapeno for 1-2 minutes until onions are translucent.
  3. Add the long grain white rice and toast for about 2 minutes until golden brown.
  4. Stir in cumin, salt, tomato sauce, and broth; mix well.
  5. Bring to a boil, then cover and reduce heat to low. Simmer for about 15 minutes until rice is cooked.
  6. Remove from heat and fluff rice gently with a fork before serving.
