  • 24 ounces cream cheese, room temperature

  • 1/2 cup sour cream, room temperature

  • 1 cup fresh or frozen blueberries
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried culinary lavender
  • 2 tablespoons granulated sugar (for compote)
  • 1 teaspoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan and line it with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, sugar, and a pinch of salt until combined. Press into the bottom of the pan and bake for about 10 minutes. Cool.
  3. For the blueberry lavender compote, simmer blueberries with sugar, lemon juice, lavender, cornstarch, and water in a saucepan until thickened. Cool slightly.
  4. Beat cream cheese and sugar until smooth. Add sour cream and vanilla; mix well. Incorporate eggs one at a time.
  5. Pour the filling over the cooled crust and swirl with the blueberry compote.
  6. Bake for 50–60 minutes until edges are set but center jiggles slightly. Cool gradually in the oven for an hour before refrigerating for at least six hours or overnight.
